Jujube (Ziziphus jujuba) is a small deciduous shrub with glossy green leaves and yellowish-green flowers. The fruit is oval and green when unripe, turning reddish-brown and wrinkled (like a date) when mature. Although it has the consistency and taste of an apple when ripe, its taste is very similar to dates when fully mature. Jujube fruit shape ranges from round to pear-shaped. It can be as small as a cherry or as large as a plum. It has a thin, edible skin and white flesh. When ripe, the fruit turns dark red. After turning completely red, the fruit begins to wrinkle and soften but is still edible. Nutritional value: Rich in vitamin C and fiber, a rich source of compounds such as flavonoids, polysaccharides, and triterpenic acids, it also contains a good amount of potassium.
